Sheet Pan Chicken Fajitas

Yield: 6 Servings

Ingredients

2 teaspoons chili powder

1 orange bell pepper; cut into strips

2 teaspoons ground cumin

1 red onion cut into wedges

2 teaspoons dried oregano

3 cloves garlic; minced

1 teaspoon smoked paprika

3 tablespoons olive oil

Ground black pepper; to taste

1/4 cup chopped fresh cilantro leaves

1 1/2 pounds boneless skinless chicken breasts; cut into thin strips

2 tablespoons freshly squeezed lime juice

1 red bell pepper; cut into strips

1 yellow bell pepper; cut into strips

Directions:

Preheat oven to 425 degrees F. Line pan/pans with parchment paper.

In a small bowl, combine chili powder, cumin, oregano, paprika, and 1 1/4 teaspoons pepper.

Place chicken, bell peppers, onion and garlic in a single layer onto the prepared baking sheet. Stir in olive oil and chili powder mixture; gently toss to combine.

Place into oven and bake for 25 minutes, or until the chicken is completely cooked through and the vegetables are crisp-tender. Stir in cilantro and lime juice.

Serve immediately.

 

 

Roasted Vegetables

Roasted Onions & Peppers

  • Preheat oven to 400F.
  • Slice peppers and onion into strips about ¼ inch thick.
  • Arrange pepper and onion slices on a baking sheet.
  • Bake for 25 minutes.

Roasted Fresh Broccoli

  • Line pan with parchment paper
  • Wash and cut up broccoli and spread on pan
  • 400 for 20-25 minutes

Sweet Potato Coins

Preheat oven: Preheat oven to 425 degrees F (230 degrees C).

Prep potatoes: Wash sweet potatoes and remove any growths or blemishes, but do not      peel. Cut potatoes into 1/3 inch (10 mm) round slices.

Spread Sweet Potato slices on pan lined with parchment paper: Add potato rounds to pan.

Bake until golden brown: Bake in oven for a total of 40-45 minutes, flipping once about halfway through and until both sides are lightly browned and crispy on the edges.

 

Sous Vide Chicken Breasts

  • Seal in Food Saver Bags with favorite herbs/marinade
  • Sous Vide @ 145 degrees for 2 hours and 45 minutes
  • Remove from Food Saver Bag and Sear quickly on each side on hot grill (just enough to sear not cook ~ less than 1 minute each side)

 

Sous Vide Beef Filets

  • Seal in Food Saver Bags with favorite herbs/marinade
  • Sous Vide @ 134 degrees for 1 hour and 25 minutes (medium rare)
  • Remove from Food Saver Bag and Sear quickly on each side on hot grill (just enough to sear not cook ~ less than 1 minute each
