Crustless Quiche

4 whole eggs
4 egg whites
8 pieces of reduced-sodium Turkey bacon, diced
1 yellow onion, minced
1 tablespoon minced garlic
10 ounces fresh spinach
Ground pepper to taste
Juice from one lemon
Tomato, diced (optional)

    1.    Preheat oven to 375 degrees.
    2.    Prepare dish: lightly spray an 8x8 glass baking dish with olive oil non stick spray.
    3.    Cook veggies: in a hot skillet, add onion, garlic, and fresh spinach with the juice of one lemon, stirring until onions are translucent and spinach has wilted.
    4.    Add diced turkey bacon pieces and cook until sizzling. Set aside.
    5.    In a medium bowl, whisk 4 whole eggs and 4 egg whites with black pepper to taste.
    6.    Mix cooked veggies and bacon with whisked eggs and transfer to baking dish.
    7.    Bake at 375 degrees for 25-30 minutes until top is browned.
    8.    Cut into quarters and top with freshly diced tomatoes if desired.
Each serving contains: 1 whole egg, 1 egg white, 2 pieces of turkey bacon, 3 ounces of veggies.
